I´m a big fan of Gordon Ramsay, but he clearly needs to learn about authentic mexican food. It is a millenary tradition that has developed in a rich and sophisticated cuisine that has asimilated several influences of different cuisines: pre-hispanic, spanish, arabic, and even caribbean and african touches in some zones, and cant´t be confused with tex-mex cooking. For God´s sake! Fajitas are as far from real authentic good mexican food as it can be (with full respect to northern mexican cuisine, my mother is from the North of Mexico and I love their food, but that´s the example of simple mexican food that has confused Americans for thinking that Mexican food is limited to guacamole, nachos,fajitas, tacos, quesadillas and burritos). Gordon loves Chinese and Indian food. Mexican food is actually more rich and varied, sophisticated and full of character and even delicate (suprised?). Please, stop confusing real mexican food with tex-mex and simple, boring, recipes! I´m from Mexico City, by the way, and I love good food, from whichever country, as long as it´s delicious and surprising and brilliantly cooked!
