Once I purchased me a nice set of knifes it was amazing what a difference they made. I got two chef knives, 6 and 8 inch, one carving knife 9 inch, one paring knife, one 6 inch serrated utility saw knife , a butcher steel and a pair of scissors that come apart for cleaning. There was an oak butcher block for storage. They are made by Kershaw out of high grade stainless that hold an edge. They have a hard rubber type coating over the handles that helps your grip when they get wet. After using them for 15 years they have no marks on the handles. I was concerned the rubber or what ever it is would come off, but it has not failed anywhere. They are priced at 250 dollars retail about 170 off of the Internet. I love them and it really makes cooking more enjoyable. They are used nearly every day and show very little wear after all these years. I cannot imagine any other knife being any better than these regardless of the price. I paid 300 bucks for them in 1995, so they have come down a few dollars in the last decade. I looked at dozens of high quality sets from 100-600 dollars as far as I was concerned these were the best. You can also get a set of eight steak knives for 75 dollar that match. Give them a look.

A fine blade produces fine food.
A dull blade produces stiches, and a $447 bill from the minor emergency clinic.

The only thing more dangerous than a sharp knife is a dull one.
